Brownies… Cake-Style or Extra Fudgy? The Battle Rages On!

What’s your favorite? Do you like your brownies to taste like rich, moist chocolate cake… or do you prefer your brownies more like dense fudge? But, it was not always like this… originally, the first brownies were always cake-style, and it is only in the last 25 years that fudge-like brownies overtook cake-style in popularity and taste preference among Americans.
When the first brownie was "invented" over 100 years ago by Fanny Farmer, it was definitely cake-like. Gradually over the years more and more chocolate has been added and brownies became richer and much more dense.
The second recipe, appearing in 1907, was in Lowney’s Cook Book, written by Maria Willet Howard and published by the Walter M. Lowney Company of Boston. Ms. Howard, a protégé of Ms. Farmer, added an extra egg and an extra square of chocolate to Fanny Farmer’s recipe, creating a richer, more chocolatey brownie. Ever since, more and more chocolate has been added to get the fudgier brownies many of us prefer today.
